Preparation
- Preheat your oven to 400°F (200°C). Ensure you have an accurate oven temperature using an external thermometer.
- In a large mixing bowl, cream together the unsalted butter, granulated sugar, and brown sugar until light and fluffy.
- Beat in the eggs, one at a time, followed by the vanilla extract.
- In a separate bowl, combine the flour, ground cinnamon, cream of tartar, kosher salt, and baking soda.
- Gradually add the dry ingredients to the wet mixture, mixing until just combined.
- To prevent the dough from sticking, use a rubber spatula to scrape down the paddle and the bowl repeatedly during the creaming process.
Baking
- Cool the cookie dough for a few minutes before shaping into balls, approximately 2 inches in diameter.
- Generously coat each cookie dough ball in cinnamon sugar.
- Place the cookies on a wire rack for 20 minutes, or until the edges and bottoms of the cookies have set and feel firm to the touch.
- Bake the cookies at 400°F (200°C) for 10 minutes, or until the edges have set but the centers are still gooey. Note: To save time, two sheet pans can be baked at a time by positioning a rack in the upper-third and lower-third positions of the oven, and baking a pan on each rack, swapping their positions half way through the Bake Time.

The cookies can be stored in an airtight container or zip-top bag at room temperature for up to 3 days.
