Summer is here, and it's time to fire up the grill for a delicious barbecue! But why limit yourself to just burgers and sausages? Vegetables can be a fantastic addition to your grilling repertoire. Here's a guide to help you grill a variety of vegetables to perfection.

Preparation

Before you start grilling, it's essential to prepare your vegetables correctly. Dry them thoroughly, cut them into uniform sizes for even cooking, and brush the grill lightly with oil to prevent sticking. Smaller vegetables can be placed on a barbecue grill mat or threaded onto metal skewers to prevent them from falling through the grates.

Grilling Vegetables

Root Vegetables

  • Sweet Potatoes: Peel, cut lengthwise into 1/4 inch strips, and grill for about 5-6 minutes per side until fork tender.
  • Carrots: Peeled and placed on the grill for 15-20 minutes, turning every 4-5 minutes (Method A), or peeled and cut into sticks, placed perpendicular to the grate for 4 - 5 minutes per side until softened (Method B).

Allium Family

  • Yellow onion: Cut into 1/2 inch rings and grilled for 3-5 minutes per side.
  • Scallions: Can be grilled perpendicular on the grill for 3-5 minutes, turning occasionally.

Squash Family

  • Squash or Zucchini: Cut into slices or circular medallions and grilled for 4-6 minutes per side.

Other Vegetables

  • Eggplant slices: Grilled for 4-5 minutes per side.
  • Asparagus: Trimmed, placed perpendicular to the grates, and grilled for 5-10 minutes, turning occasionally.
  • Brussels Sprouts: With the tips and stems removed and sliced in half for about 4-5 minutes per side.
  • Bell pepper: Grilled whole or cut into thick slices or chunks.
  • Corn: Peeled, rinsed, and grilled for about 12 minutes or until kernels are golden brown.

Special Cases

Artichokes can be grilled by cutting them in half, removing the choke, and grilling for 15 minutes per side until tender, or by steaming, cooling, cutting, and grilling until golden. Mushrooms can be grilled for 5 - 10 minutes per side until tender, depending on the mushroom.

Cooking Tips
