Ingredients
- 1/2 cup unsalted butter
- 1/4 cup granulated sugar
- 2 tsp. vanilla extract
- 1 cup all-purpose flour
- 1/2 - 1 Tbsp. culinary-grade matcha powder
- 1/2 tsp. salt
- 1/4 cup milk chocolate or dark chocolate chips
- 1 tsp. coconut oil
Equipment
- Large mixing bowl
- Small mixing bowl
- Small microwave-safe bowl
- Hand mixer
- Rubber spatula
- Small cookie scoop
- 2 baking sheets
- Parchment paper or silicone mats
- Bamboo skewer or toothpick
- Cooling rack
- Piping bag
Instructions
- Preheat your oven to 180°C (350°F). Line your baking sheets with parchment paper or silicone mats.
- In a large mixing bowl, cream together the butter and sugar until smooth. Add the vanilla extract and mix well.
- In a separate small bowl, sift the matcha powder into the flour and salt. Gradually add this to the butter mixture, mixing until just combined.
- Using a small cookie scoop, gather about 1.5 Tbsp. of matcha dough and roll into a ball. Place on the prepared baking sheet. Repeat with the remaining dough, making sure to leave some space between each ball.
- Using a bamboo skewer or toothpick, add indents to the matcha dough balls to create turtle shell marks. Poke holes in the turtle's head for the eyes.
- Shape the head, legs, and tail from the plain dough and attach to the turtle shell.
- Bake the cookies for about 10-12 minutes or until edges are set and the regular dough is slightly golden brown. Allow the cookies to cool on the tray for 5 minutes and then transfer to a cooling rack to fully cool.
- In a small microwave-safe bowl, melt the chocolate chips and coconut oil. Transfer the melted chocolate to a piping bag and use it to decorate the top of the shells.
- For added texture, sprinkle crushed macadamia nuts on top of the chocolate.
- These Shortbread Matcha Turtle Cookies are best enjoyed with coffee or on top of ice cream. Store any leftovers in an airtight container at room temperature for up to 3 days.
The matcha taste in these cookies provides a beautiful balance to the sweetness and butteriness of the cookie, making them a perfect treat for any occasion. Enjoy!
