Ingredients

  • 1/2 cup unsalted butter
  • 1/4 cup granulated sugar
  • 2 tsp. vanilla extract
  • 1 cup all-purpose flour
  • 1/2 - 1 Tbsp. culinary-grade matcha powder
  • 1/2 tsp. salt
  • 1/4 cup milk chocolate or dark chocolate chips
  • 1 tsp. coconut oil

Instructions

  1. Preheat your oven to 180°C (350°F). Line your baking sheets with parchment paper or silicone mats.
  2. In a large mixing bowl, cream together the butter and sugar until smooth. Add the vanilla extract and mix well.
  3. In a separate small bowl, sift the matcha powder into the flour and salt. Gradually add this to the butter mixture, mixing until just combined.
  4. Using a small cookie scoop, gather about 1.5 Tbsp. of matcha dough and roll into a ball. Place on the prepared baking sheet. Repeat with the remaining dough, making sure to leave some space between each ball.
  5. Using a bamboo skewer or toothpick, add indents to the matcha dough balls to create turtle shell marks. Poke holes in the turtle's head for the eyes.
  6. Shape the head, legs, and tail from the plain dough and attach to the turtle shell.
  7. Bake the cookies for about 10-12 minutes or until edges are set and the regular dough is slightly golden brown. Allow the cookies to cool on the tray for 5 minutes and then transfer to a cooling rack to fully cool.
  8. In a small microwave-safe bowl, melt the chocolate chips and coconut oil. Transfer the melted chocolate to a piping bag and use it to decorate the top of the shells.
  9. For added texture, sprinkle crushed macadamia nuts on top of the chocolate.
  10. These Shortbread Matcha Turtle Cookies are best enjoyed with coffee or on top of ice cream. Store any leftovers in an airtight container at room temperature for up to 3 days.
