Emily English, also known as Em The Nutritionist, has shared a new recipe that is sure to delight health-conscious foodies. Her latest creation, the Strawberry Shortcake Yogurt Breakfast Loaf, is a protein-rich, low-calorie treat that is practical to make and not just to look at.

This recipe, found in her latest recipe book titled "Live to Eat: The Food You Crave, The Nutrition You Need," is a testament to Em's nutrient-packed, delicious cooking style. With nearly 2 million Instagram followers, Em has made a name for herself as a foodie sensation.

To prepare this breakfast loaf, you'll need a loaf tin lined with non-stick baking paper (if not non-stick, it needs to be lined). The recipe calls for 450g of Skyr-style strawberry yogurt, 150g of oat flour or ground oats, 50g of plain flour, 50g of ground almonds, 2 large free-range eggs (at room temperature), 1 tablespoon of extra-virgin olive oil, 100g of caster sugar, 1 teaspoon of bicarbonate of soda, and 2 teaspoons of baking powder.

The unique twist comes with the addition of 1 teaspoon of vanilla extract, the zest of 1/2 lemon, and a cupped handful of diced strawberries. The recipe also includes 4 teaspoons of baking powder and 1 teaspoon of bicarbonate of soda, ensuring a fluffy and protein-rich bread.

The Strawberry Shortcake Yogurt Breakfast Loaf is protein-packed, with 9g of protein per slice and under 210kcal per portion. If a large loaf tin is not available, the recipe can be baked into muffins instead.

Once baked, the loaf should be allowed to rest for 15 minutes before serving. This gives it time to cool down and firm up, making it easier to slice and serve.

Em The Nutritionist's culinary expertise extends beyond breakfast loaves. Her latest recipe book includes a variety of dishes, such as her popular Super Greens Shakshuka.
