Maple syrup production begins when the temperature rises above freezing during the day and drops below freezing at night, a phenomenon that triggers the sap flow in maple trees. The International Maple Syrup Institute (IMSI) has established four grades of maple syrup: Golden Delicate, Amber Rich, Dark Robust, and Very Dark Strong.

The Golden Delicate grade, with its golden colour and mild, delicate maple flavour, is often used as a topping for ice cream or specialty desserts. Syrup produced from sap at the beginning of the season is light in colour and delicate in taste. As the season progresses, the sap loses some of its pristine characteristics, producing syrup that is darker and stronger in flavour.

Amber Rich, a maple syrup with a light amber colour and a rich full-bodied taste, is popular for pancakes, waffles, or French toast. Dark Robust, a dark syrup with a pronounced robust maple taste, is preferred by buyers who are looking for a full-bodied maple flavour and is versatile for various uses in cooking and baking. The Very Dark Strong grade, a late-season syrup with a dark signature colour and strong flavour, is often used for cooking due to its strong maple flavour.

For long-term storage, maple syrup can be placed in the freezer. However, for regular consumption, it can be stored for months in the refrigerator. It's essential to note that maple syrup sold at a modest reduction in price may not be table grade, as maple contest judges do not consider Dark Strong a table grade.

Pure maple syrup has more beneficial minerals and vitamins compared to other popular sweeteners. Independent nutritional studies have even labeled maple syrup as a super food.

In recent years, the market has seen a variety of value-added maple products, including bourbon-barrel-aged maple syrup. The most popular variant of bourbon-barrel-aged maple syrup originates from the region associated with bourbon production in the United States, typically Kentucky, where bourbon barrels are traditionally made and used for aging maple syrup.

The benefits of maple syrup extend beyond its flavour and nutritional value. Its unique taste adds a distinct touch to various dishes, making it a favourite among chefs and home cooks alike.
