Jenna Zoe's No-Bake Crispy Cakes

These addictive vegan treats are a hit among health enthusiasts, often used to convert people to a healthier lifestyle. To make these, you'll need 100g of dark chocolate, 60ml of coconut oil or sunflower spread, 1/4 teaspoon of salt, 110g of plain corn flakes, and the ingredients for the chocolate mousse filling.

The mousse filling includes 2 tbsp Aduna Super-Cacao Powder, 320ml coconut cream, 2 tbsp maple syrup, and 100g dark chocolate. The cakes are made in muffin pans lined with paper cases. Store them in the freezer and enjoy them for up to two weeks.

Jenna Zoe's Sticky Carrot Bites

These bites, reminiscent of brownies in texture, are an easier-to-eat alternative to traditional carrot cake. They're made with olive oil, which contributes to their unique flavor. The ingredients include 1 1/2 tablespoons of ground flaxseeds, 4 1/2 tablespoons of water, gluten-free flour, baking powder, spices, xylitol, apple puree, almond milk, grated carrots, raisins, walnuts, and more. The cake batter consists of 1/2 cup of Aduna Super-Cacao Powder, 1 1/2 cups of diced, steamed & cooled sweet potato, 1/2 cup of maple syrup, 1 cup + 2 tbsp water, and 1 tbsp vanilla extract. The cake also includes 3/4 cups of spelt flour, 2 tsp baking powder, 1 1/2 tsp baking soda, and 3/4 tsp salt.

The chocolate ganache for the cake is made with 100g dark chocolate and 1/2 cup coconut milk. The cake is baked in two 8" cake pans and decorated with the chocolate ganache and optional marzipan eggs.
