New Jersey-Based 3BR Distillery Explores Unconventional Spirits: Peas
In the heart of the Garden State, a groundbreaking distillery named 3BR is making waves in the spirits industry. Based in California, but with strong roots in New Jersey, 3BR Distillery is leading the charge as the only distillery in America to produce spirits solely from peas.
The company's ethos is deeply rooted in supporting the local economy. This commitment is evident in their partnership with a local farmer, who is growing peas for the first time, and in their collaboration with Rabbit Hill Farms for the malting process.
Robert Mattera III, co-founder of 3BR and head of its bar program, is spearheading an ambitious project to breed hybrid varieties of peas, better suited to the New Jersey environment. He is utilising a USDA database of 500 accessions of peas to achieve this goal. This long-term project, expected to take over a decade, aims to bring the pre-gelatinization process to New Jersey, as the company that supplies the product is already based in the state.
3BR's spirits, Mendel and Gorovka, are already making an impact. Mendel, retailing for approximately $30, and Gorovka, priced at around $45, can be found in bars and stores across New Jersey and New York.
The source of the unmalted peas is France, a testament to the global reach of this innovative distillery. As 3BR continues to grow and evolve, it remains committed to its mission: to support the local economy while pushing the boundaries of the spirits industry.
