The M Resort in Henderson, Nevada is set for a significant expansion, as Penn Entertainment announces plans to add a new restaurant from The Emeril Group, Meril, as a central focus point. This expansion follows the grand opening of the Hollywood Casino Joliet in Illinois and is part of Penn Entertainment's overall investment plan, aiming to meet the growing demand for high-quality gaming and hospitality experiences.

Chef Emeril Lagasse's Meril, named after his daughter, is set to bring a refined yet accessible dining experience to the Henderson community and its visitors. Known for showcasing Lagasse's signature style, Meril offers an exciting addition to the resort.

The expansion also includes a new 15,000-square-foot Montese Ballroom, a 384-room tower, nearly doubling the resort's total capacity to 765 rooms. This growth will solidify the M Resort's position as a premier destination, according to Todd George, Penn Entertainment's executive vice president of operations.

Penn Entertainment's CEO and president, Jay Snowden, expressed excitement about the expansion, citing the strong demand from group business and the growing local market in Henderson. He announced the opening date of the $206 million expansion on December 1.

The Emeril Group, founded by Chef Emeril Lagasse, is bringing Meril to the M Resort. Lagasse previously operated Table 10 and Lagasse Stadium at the Venetian/Palazzo, which closed in 2017 and 2020, respectively. The chef of the new restaurant at the expanded M Resort in Henderson, Nevada, remains undisclosed.

Penn Entertainment is securing $150 million in funding during the fourth quarter from Gaming and Leisure Properties, Inc., at a 7.79% capitalization rate. This expansion is the first of four growth projects announced by Penn Entertainment, with a total investment of $850 million.

In addition to the M Resort expansion, Penn Entertainment also plans to open a new hotel next to the Hollywood Casino in Columbus, Ohio, later in 2025. The company is also launching a new land-based Hollywood Casino in Aurora, Illinois, in the first half of 2026.

Chef Emeril Lagasse currently runs two other restaurants in Las Vegas: Emeril's New Orleans Fish House at the MGM Grand and Delmonico Steakhouse at The Venetian. With the addition of Meril at the M Resort, Lagasse's presence in the Las Vegas dining scene is set to grow even further.
