Ice Cream Sandwich Cake

Our first recipe is for an Ice Cream Sandwich Cake. Here's what you'll need:

  • 8 ice cream sandwiches
  • Thawed whipped cream topping
  • Crushed Oreo cookies
  • Rainbow sprinkles

To assemble, arrange the ice cream sandwiches on a foil-covered baking sheet. Spread a layer of whipped cream on top and sides of the cake, and sprinkle with the Oreo cookies and sprinkles. Freeze the cake until it's firm, and then slice it with a sharp knife, wiping the knife before each cut.

Ice Cream Cupcakes

For a bite-sized version, try our Ice Cream Cupcakes! This recipe uses silicone baking cups or a cupcake tin, and here's what you'll need:

  • 6 cupcake liners
  • 1 cup of chocolate ice cream
  • 1 cup of strawberry ice cream

  • 2 4-inch cake pans
  • Vanilla ice cream
  • Chocolate ice cream

  • Plastic wrap

To assemble, line each cake pan with plastic wrap, and pack one pan with vanilla ice cream and the other with chocolate ice cream. Add a layer of crushed Oreos and/or sprinkles between the ice cream layers. Freeze the cakes for at least 4 hours, and then slice them into rounds. Serve immediately, or freeze for 2 to 3 hours before serving.

For a more compact crust, you can crush the Oreos into fine crumbs with a food processor. And for a more easily spreadable whipped cream, use whipped cream from a tub, not a can. If the ice cream in the sandwiches becomes too soft, simply place it in the freezer for 30 minutes.
